Boil water on high, add pasta and reduce to medium and simmer uncovered until water is very shallow (about 10 minutes) add all other ingredients and reduce to low heat covering with the lid cracked 10 minutes turn off heat and uncover until sauce thickens slightly.
It seems like my family eats out a lot more when we start to exercise and I think this is because we don't treat ourselves to our favorite flavors at home. I imagine that we feel guilty adding the amount of salt to home-cooked foods that our body craves especially when we are sweating more and drinking more water. This recipe was invented for volleyball player in my family who loves pasta alfredo but needs to watch her weight. The substitution of sour cream for the traditional cheese and the olive oil for the usual butter keeps her satisfied and guilt-free!
